Homemade Mayo

    Ingredients

    • 1 large whole egg, preferably pasture raised
    • 2 tsp fresh lemon juice
    • 2 tsp brown or Dijon mustard
    • ¼ tsp salt
    • ¾ cup approved oil

    Directions

    Pour egg, lemon juice, mustard, and salt in a blender or food processor and blend until combined.

    Add about 1/3 of the oil and blend.

    Turn off the blender and add about 1/3 more oil and blend again, continue with this step until all the oil is blended in.

    Pour into an airtight container and store in the refrigerator.
