Tomato Basil & Beef Soup

    Ingredients

    • 30 ounces diced tomatoes, canned
    • 1 c coconut milk, canned
    • 1 T approved oil
    • 1 c onion, diced
    • 3 tsps garlic cloves, minced
    • 1 tsp salt
    • 1 c chicken stock or broth
    • ¼ cups fresh basil, chopped
    • 1 ½ lbs cooked ground beef

    Directions

    Add diced tomatoes and coconut milk to a blender and blend until smooth.

    Heat a large stockpot over medium-high heat.

    Add approved oil and sauté onions until translucent.

    Add garlic and cook until fragrant.

    Pour in tomato/coconut milk mixture, salt and chicken broth. Bring to a boil.

    Reduce heat to simmer 10-15 minutes.

    Mix in fresh basil and cooked ground beef. Cook until heated through.
