Walnut Crusted Tilapia with Roasted Cauliflower

    Ingredients

    • 3/4 c. crushed walnuts
    • 1 1/2 T mustard
    • 1 tsp dried basil
    • 1/2 tsp salt
    • 3 tilapia fillets (4 to 6 oz per serving)
    • 2 cups cauliflower
    • 1T approved oil
    • Salt and Pepper, to taste

    Directions

    Preheat oven to 425 F.

    Mix mustard, basil, and salt together.

    Coat the tilapia fillets with this mixture, and then fill a plate with the crushed walnuts.

    Press each side of the fillets into the walnuts, and place on a baking pan coated with approved oil.

    Coat cauliflower with 1T approved oil, and add salt and pepper, to taste.

    Place around outside of fillets.

    Cook for 15 minutes or until fish is flaky and cauliflower is browned.
