Sheet Pan Cinnamon Carrots and Chicken Dinner

    Ingredients

    • 4 carrots, diced
    • 2 small sweet potatoes, diced
    • 1 lb chicken breasts
    • 2 tsp ground cinnamon
    • 1/2 tsp ground cloves
    • 1/2 tsp ground ginger
    • 2 T dried parsley
    • 2 T approved oil

    Directions

    Combine all ingredients in a zipper-top, 1 gallon freezer bag and toss to combine.

    Preheat oven to 350 F.

    Open the bag and pour 1/4 c. approved oil.

    Close it up again and toss well to coat.

    Pour the contents of the bag out onto a sheet pan with edges.

    Bake for 1 hour or until the chicken reaches at least 165 F. on a meat thermometer.

    Cool slightly and serve.
