Shredded Chicken with Veggies

    Ingredients

    • 1 T butter or approved oil
    • 1/4 onion, diced
    • 2 tsp garlic cloves, minced
    • 2 c sliced Zucchini
    • 2 c sliced Carrot
    • 1/4 c cherry tomatoes, halved
    • 1 lb chicken breasts, cooked and shredded
    • ¼ c fresh parsley, chopped

    Directions

    In a large skillet, heat approved oil over medium-high heat.

    Add onions and sauté until they begin to caramelize.

    Add garlic, zucchini, and carrots and cook until tender.

    Add cherry tomatoes and chicken and cook until warm. Top with parsley.
