Chicken Cauliflower Fried Rice

Ingredients
- 1 lb of chicken breast, chopped
- 1 large onion, diced
- 1 1/2 c carrots, diced
- 1 head of cauliflower, grated
- 2 eggs, scrambled (optional)
- 1/2 c diced green onions
- 2 T approved oil
- 1/2 c coconut aminos
- 1 tsp salt
- 1 1/2 tsp ground ginger (adjust to taste)
- 1 tsp garlic powder
Directions

Cut chicken up into cubes and cook in skillet over medium heat until done.

In a separate large pan, cook the onion and carrots in an approved oil until soft. About 7-9 minutes. Season with salt, ginger, and garlic as it’s cooking.

Once the carrots are tender, add the cauliflower and coconut aminos. Stir to evenly coat the cauliflower and cook for about 5 minutes.

Push the mixture to one side of the pan and add the scrambled eggs. Stir until cooked, then mix in.

Add cooked chicken to pan with cauliflower mixture.
Add the green onion, take off the heat, and serve.
