Zucchini Turkey Burgers Lettuce Wraps

Ingredients
- 5 oz grated zucchini (when squeezed 4.25 oz)
- 1 lb 93% lean ground turkey
- 1 egg
- 1 T grated red onion
- Butter or Romaine lettuce
- 1 - 2 avocados
- 1 garlic clove, grated
- 1 tsp kosher salt
- Pepper, to taste
- 2 T approved oil

Squeeze ALL the moisture from the zucchini with paper towels.

In a large bowl, combine ground turkey, zucchini, egg, garlic, onion, salt and pepper. Make 4 equal patties, not too thick so they cook in the center.

Heat a large nonstick skillet on high heat. When hot, add approved oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through.

Slice the patty in thirds and wrap in butter or romaine lettuce. Serve with 1/4 to 1/2 avocado per serving and Enjoy!
