Asparagus Sweet Potato Chicken Skillet

    • 1 lb. boneless chicken breasts
    • 1 medium sweet potato, peeled and diced
    • ½ c chicken broth or water
    • 1 lb fresh asparagus (the spears should be cut at a diagonal in 1 or 2 inch pieces)
    • 2 T approved oil
    • Salt and ground fresh black pepper, chicken to taste.
    • 4 garlic cloves, minced
    • 3/4 tsp fine sea salt
    • 3/4 tsp freshly ground black pepper
    • ½ tsp crushed red pepper



    Cut the chicken into small pieces and season with salt and pepper.


    In a skillet over medium heat, add approved oil, garlic, and chicken.


    Sauté the chicken for about 7-10 minutes or until it is cooked through. Don’t forget to stir well. Remove chicken from the skillet.


    In the same skillet, add sweet potato and chicken broth.


    Cook for about 7-10 minutes or until the sweet potato is cooked.


    Add asparagus and cook for about 5-6 minutes. After sweet potato and asparagus are cooked, then add chicken back into the skillet. Season with salt, pepper, and crushed red pepper.
