Berry Chicken Salad

  • Serving Size4


    • 1 lb of cooked chicken, cut into bite size pieces.
    • 1/2 c. organic strawberries, chopped
    • 1/2 c. organic blueberries
    • 1/2 c. paleo mayo (See homemade paleo mayo recipe in database) or full fat greek yogurt
    • Romaine or butter lettuce
    • 2 T chives
    • 1/8 tsp salt or to taste
    • Slap ya mama seasoning (optional)
    • 1/2 c. chopped pecans for topping



    In a large bowl, combine cooked chicken, strawberries, blueberries, mayo, chives, and salt. Stir gently until everything is evenly coated.


    Refrigerate until ready to serve.


    Serve over lettuce and top with pecans right before serving.
