Zoodles with Avocado Pesto

    Ingredients

    • 4 med. zucchinis

    For pesto sauce:

    • 2 T approved oil, divided
    • 1 garlic clove
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 2 T fresh chopped cilantro
    • 1 ripe avocado
    • 2 T chopped raw walnuts
    • 3 T water

    For pesto, combine 2 T approved oil and all ingredients aside from zucchini in a food processor and puree until fully incorporated. Set aside.

    Use spiralizer to spiral zoodles. Preheat pan over medium heat and add 1 T approved oil along with zucchini noodles and a pinch of salt. Cook for about 2 minutes stirring continuously until softened a little.

    Once zoodles are cooked, add pesto to pan and combine well. Serve!
