Beef and Broccoli

    Ingredients

    • 7 cups cut up broccoli
    • 2 T approved oil
    • 2 T grated fresh ginger
    • 2/3 cup coconut aminos
    • 1 tsp salt
    • 1 tsp garlic powder
    • 1 tsp red pepper flakes
    • 1 lb. flank steak or sirloin, cut in strips against the grain

    Directions

    Add oil in a large skillet and turn the heat on to medium-high.

    Add the broccoli, ginger coconut aminos, salt, garlic powder, and red pepper flakes. Cook until broccoli starts to soften, about 5 minutes.

    Add the beef and cook for another 5 minutes.

    Divide the meal into fourths.

    Serve over 1/4-1/2 cup cooked quinoa.
