6 Ingredient Chicken Stew

    • 3 c chicken stock
    • 1 lb chicken breast or thighs, shred or cube
    • 3 carrots, roughly sliced
    • 2 c broccoli, chopped
    • 2 c cauliflower, chopped
    • 1 medium yellow onion, cut in thin wedges
    • 2 T Italian seasoning
    • Salt and pepper, to taste (start with ½ tsp. of each and add more to taste if you like)



    Add all ingredients in a Crockpot or Instant pot.


    If using a slow cooker, cook on high for 4 hours or low for 6 hours. If cooking in the Instant pot, then cook on poultry for 25 minutes. 


    Add more salt and pepper to taste, if necessary.
