6 Ingredient Chicken Stew

Ingredients
- 3 c chicken stock
- 1 lb chicken breast or thighs, shred or cube
- 3 carrots, roughly sliced
- 2 c broccoli, chopped
- 2 c cauliflower, chopped
- 1 medium yellow onion, cut in thin wedges
- 2 T Italian seasoning
- Salt and pepper, to taste (start with ½ tsp. of each and add more to taste if you like)
Directions

Add all ingredients in a Crockpot or Instant pot.

If using a slow cooker, cook on high for 4 hours or low for 6 hours. If cooking in the Instant pot, then cook on poultry for 25 minutes.

Add more salt and pepper to taste, if necessary.
