    Ingredients

    • 1 sweet potato
    • 8 oz  ground beef
    • 2 green onions
    • ½ avocado
    • 2 eggs
    • No sugar added salsa (make sure ingredients are only veggies and spices)
    • 1 T cumin
    • Salt/pepper to taste
    • 2 T plus 1 tsp approved oil
    • 2 tsp garlic powder

    Directions

    Peel and cut sweet potatoes into bite-sized cube.

    Heat skillet to medium-high and add 1 T oil. Add sweet potatoes and season with salt and cook until just a bit soft.

    Move from pan and add 1/2 T of oil to brown ground beef.

    Season with cumin, salt, and garlic powder.

    Chop onions and add to beef and cook a few more minutes, then add sweet potatoes.

    In another pan, cook 1 egg per serving in 1 tsp of oil. It’s super yummy when the yolk is runny so it can drizzle on your food!

    Divide beef/sweet potato mixture into 2 servings. Top with your cooked egg and 1/4 avocado and serve.
