Butter Chicken

    Ingredients

    • 2 pounds chicken thighs
    • 1 cup chicken stock
    • 2 tsp ground cumin
    • 1 T paprika
    • 1 can diced tomatoes
    • ½ stick of butter
    • 2 tsp salt
    • ½ cup Greek yogurt
    • Quinoa

    Directions

    Put all ingredients except the chicken into the blender.

    If using Instant Pot, put in chicken, all blended liquid and set pot manually to 15 minutes. Let pressure release on it’s own.

    If using oven, place chicken in casserole type dish and pour ingredients from blender over chicken. Cook at 350 F for 35 minutes.

    In the mean time, cook quinoa according to directions.

    Serve over quinoa and enjoy!
