Cajun Sausage Breakfast Quiche

    Ingredients

    • 1 c full fat canned coconut milk
    • 6 eggs
    • 2 c fresh spinach 
    • 2 sausage links (I used Aidell’s Cajun)
    • 1/2 onion, diced
    • Salt and pepper, to taste

    Directions

    Cook sausage until done, then add in onion and cook until translucent.

    Add in spinach and sauté for an additional 2-3 minutes.

    Grease pie plate and add sausage/onion/spinach mixture.

    In a bowl, mix eggs and coconut milk until combined and season with salt and pepper.

    Pour over sausage mixture in pie plate and cook on 400 F for 15 to 20 minutes, or until eggs are thoroughly cooked.
