Easy Avocado Tuna Salad

Ingredients
- 4 cans tuna packed in water, drained and flaked
- 2 large celery stalks, thinly sliced and diced
- 3 - 4 medium avocados, peeled, pitted, sliced and diced
- ¾ small red onion, thinly sliced
- 1/3 cup chopped fresh cilantro
- 1/2 medium lemon, juiced
- 2 T approved oil
- 1 tsp sea salt + more to taste
- 1/8 tsp black pepper + more to taste

In a large mixing bowl, carefully stir together all ingredients.

In a bowl, whisk together the eggs, coconut milk, rosemary, and season with salt and pepper to taste.
