Easy Avocado Tuna Salad

    Ingredients

    • 4 cans tuna packed in water, drained and flaked
    • 2 large celery stalks, thinly sliced and diced
    • 3 - 4 medium avocados, peeled, pitted, sliced and diced
    • ¾ small red onion, thinly sliced
    • 1/3 cup chopped fresh cilantro
    • 1/2 medium lemon, juiced
    • 2 T approved oil
    • 1 tsp sea salt + more to taste
    • 1/8 tsp black pepper + more to taste

    In a large mixing bowl, carefully stir together all ingredients.

    In a bowl, whisk together the eggs, coconut milk, rosemary, and season with salt and pepper to taste.
