Prosciutto Egg Cups

    Ingredients

    • 6 eggs
    • 12 slices of prosciutto
    • Sea Salt & pepper, to taste
    • Fresh or Dried Parsley (optional)

    Preheat oven to 400 F.

    Grease 6 cups of a regular size muffin tin. I like to use approved oil.

    Mold 2 pieces of prosciutto into each cup. Make sure there are no holes that the egg can’t seep through.

    Crack one egg into each of the prosciutto cups. Sprinkle with salt and pepper.

    Bake for 15 minutes. Remove and let sit for 3-5 minutes.

    Run a knife around the edge of each cup to loosen from the muffin tin.

    7

    Sprinkle with parsley (optional) and enjoy!
