Protein Cookie

Ingredients
- 2 1/2 c unsweetened shredded coconut
- 3/4 c Lakanto monkfruit
- 8 T almond butter
- ½ T organic vanilla extract
- ½ T organic almond extract
- 10 T vanilla protein powder
- ½ cup walnuts
- 1-3 T of water, as needed
Directions

Mix all ingredients except water thoroughly.

Add a little water at a time if needed to hold together, dough should be sticky.

Form into balls and flatten to make cookies that are 2” in diameter.

Refrigerate until ready to eat.
