Protein Cookie

    Ingredients

    • 2 1/2 c unsweetened shredded coconut
    • 3/4 c Lakanto monkfruit
    • 8 T almond butter
    • ½ T organic vanilla extract
    • ½ T organic almond extract
    • 10 T vanilla protein powder
    • ½ cup walnuts
    • 1-3 T of water, as needed

    Directions

    Mix all ingredients except water thoroughly.

    Add a little water at a time if needed to hold together, dough should be sticky.

    Form into balls and flatten to make cookies that are 2” in diameter.

    Refrigerate until ready to eat.
