Garlic Roasted Shrimp with Zucchini

    Ingredients

    • 8 - 12 oz peeled and deveined shrimp, thawed if frozen
    • 1 T approved oil
    • 1 T ghee, melted
    • 2 garlic cloves, minced
    • ½ lemon, zested and juiced
    • ¼ tsp salt
    • Fresh ground pepper, to taste
    • 2 medium zucchini, spiralized or sliced into thin strips for zucchini pasta

    Preheat oven to 400 F.

    Add shrimp, approved oil, ghee, garlic, lemon zest, lemon juice, salt and pepper to the baking dish. Toss to coat shrimp.

    Bake for 8-10 minutes, turning once. Cook until shrimp are pink and just cooked through, or until heated through if using pre-cooked shrimp.

    You can saute the zucchini in a skillet for a softer texture.

    Then add the zucchini pasta, toss and serve.
