Hummus Grilled Chicken with Roasted Asparagus

    • 3— 4 to 6 oz of Chicken breasts
    • 3 T of Hummus (1 T of hummus per chicken breast)
    • Salt/Pepper, to taste
    • Paprika
    • 6 c of asparagus
    • 2 T approved oil
    • Crushed garlic



    Dry breasts and sprinkle with salt and pepper. Rub down with hummus, sprinkling with paprika last. Cook at 25-30 minutes at 450 F.

    For Roasted asparagus:


    Heat oven to 400 F, rinse asparagus and put in lined baking pan. Drizzle with approved cooking oil. Sprinkle with salt and pepper and crushed garlic. Roast about 10 minutes.
