Turkey Italian Meatballs

    Ingredients

    • 2 lbs. pastured ground turkey
    • 2 T Italian seasoning
    • 1 egg
    • 1 T parsley, finely chopped
    • 2 tsp salt
    • 1 tsp ground black pepper

    For the marina sauce:

    • 28 oz can crushed tomatoes
    • 1 medium onion, chopped
    • 2 T approved oil
    • 1 bay leaf
    • 1 garlic clove, chopped
    • 1 T parsley, finely chopped
    • 1 tsp ground black pepper

    Preheat oven to 400 F.

    Line a cookie sheet with unbleached parchment paper.

    Mix the meat, egg, and seasonings together in a large bowl and form about 2 T of the meat mixture into even sized meatballs and place them on the lined cookie sheet.

    Bake in oven for 20 minutes, or until cooked through.

    While the meatballs are baking, add approved oil to a pan and heat up on medium heat, then add the chopped onion and sauté for 5 minutes. Add the chopped garlic, canned tomatoes, bay leaf, and pepper.

    Cook on medium-low heat for 20-30 minutes.

    Serve over the cooked meatballs and sprinkle with chopped parsley.
