Chicken Fajita Bowl

    Ingredients

    • 4 to 6 oz. Chicken breast
    • 2 cloves of garlic
    • 1/2 tsp salt
    • 1/2 tsp ground cumin
    • 1/2 tsp chili powder
    • 1/2 tsp smoked paprika
    • 1/4 c chopped cilantro
    • 3 Cherry tomatoes, sliced in half
    • 1/4 Avocado
    • Bell peppers
    • 1 cup Cauliflower rice

    Directions

    Season 4 to 6oz chicken breasts with cloves of garlic, salt, ground cumin, chili powder, smoked paprika, chopped cilantro.

    Add approved oil to pan and sear each side for 5-7 minutes (longer if thicker).

    Cut and put in bowl with 3 cut cherry tomatoes, ¼ avocado (or 1 T approved oil), bell peppers.

    Place over 1 cup of Cauliflower rice. 

    Cauliflower Rice: chop into florets. Pulse in food processor until it resembles rice. Cook in 1 T approved oil until tender.  Season w/salt, pepper, and garlic.
