Chicken with Spicy Zucchini Noodles

    Ingredients

    • 16 ounces Chicken breasts or thighs
    • 2 medium zucchini (ends cut off)
    • 1/2 cup cabbage (shredded)
    • 1/2 cup carrots (shredded)
    • 1 handful cilantro (chopped)

    For the Dressing: (reserve 2 T to rub on chicken)

    • 1/2 cup creamy almond butter (at room temperature)
    • 1/3 cup avocado oil
    • 1 T blackstrap molasses
    • 2 T lime juice
    • 1 tsp ginger (grated)
    • 1/2 t chili flakes

    Directions

    Spiralize zucchini (or purchase already spiralized zucchini, fresh or frozen). Place zucchini in a bowl and add cabbage and carrots. Set bowl aside.

    Combine ingredients for dressing. Stir until smooth and thick.

    Pour dressing over zucchini. Stir to coat and garnish with cilantro.

    Rub chicken with 2 tablespoons (1.5 T per chicken) then cook at 350 F for 30 minutes or until done.

    Serve over zucchini noodles.
