Chili Roasted Chicken Thighs

    Ingredients

    • 2 lbs. boneless chicken thighs
    • 1 T approved oil
    • 1 T chili powder
    • Sea salt, to taste
    • Fresh ground pepper, to taste
    • Fresh cilantro for garnish
    • Lime wedges for serving

    Preheat oven to 375 F.

    Place chicken on a sheet pan or large baking dish. Drizzle with approved oil and turn to coat. Rub with chili powder, salt, and pepper.

    Roast the chicken thighs in the oven until cooked through, about 15 minutes.

    Sprinkle with cilantro and serve with lime wedges.
