Deep Dish Salted Caramel Chocolate Chip Blondies

  • Serving Size8

    For the caramel:

    • 1/4 c coconut oil, melted
    • 1/3 c almond butter
    • 1/4 c Lakanto maple flavored syrup
    • 1 dropper of stevia

    For the blondie:

    • 1 1/2 c almond flour
    • 1/4 tsp baking soda
    • 1/2 tsp sea salt
    • 1/2 tsp cinnamon
    • 1/4 cup melted coconut oil, melted
    • 2 dropperfuls of stevia
    • 1 egg, beaten
    • 2 tsps vanilla extract
    • 3/4 c dark chocolate chips (Lily’s recommended)

    Preheat oven to 350 F.

In a blender, combine the coconut oil, almond butter, maple syrup, and stevia. Blend until mixed well and smooth. Pour into an 8 inch cast iron skillet (or glass baking dish if you do not have a cast iron skillet).

In a small bowl, combine the almond flour, salt, baking soda, and cinnamon. Add the coconut oil, stevia, egg and vanilla extract. Stir until just combined. Fold in chocolate chips.

Add to the skillet, smoothing out on top of the caramel.

Place in the oven and bake for 20 – 25 minutes, or until the blondie is cooked through.
