Beef Tips and Cauliflower Rice

    • 2 T approved oil
    • 2 lbs. of beef stew meat
    • Salt and black pepper
    • 1 onion, chopped
    • 3 cloves of garlic, minced
    • 1 cup beef broth
    • 3 cups of fresh mushrooms (cut in half or quarters)
    • 1 T Dijon mustard or spicy mustard of your choice
    • 1-2 heads cauliflower


    Instant Pot Directions:


    Sprinkle beef stew meat with salt and pepper.


    Set your Instant Pot to “Sauté” setting and add oil. Add beef and brown for about 3-5 minutes. Add chopped onion and garlic and brown for about 2 minutes.


    Add beef broth and put on lid. Select the “Meat/Stew” setting on the Instant Pot and set the timer for 35 minutes. Make sure the pressure release valve is in the closed position. We want to pressure cook this for 35 minutes to tenderize the meat.


    When done, quick release the pressure valve, open up the lid carefully, and add 1 tablespoon of Dijon mustard, and mushrooms. Stir and let it simmer for about 10 minutes or until the mushrooms are cooked through. Add more salt, pepper, or additional approved seasonings.

    Stovetop Directions:


    Heat the oil on a medium heat in a large pot with a solid bottom, then add the onion and garlic and sauté for a couple minutes, now add the beef and brown it for a couple of minutes.


    Add the beef stock, salt, and pepper.


    Cook it on the stove top on a low simmer for about an hour with a lid on the pot, do not boil.


    Finally add the mushrooms and Dijon and cook for a further 30 minutes or until beef is tender.


    To Make Cauliflower Rice: chop cauliflower into florets. Pulse in food processor until it resembles rice. Cook in 1 T approved oil until tender. Season w/salt, pepper, garlic.
