Avocado Sweet Potato Brownies

Just when we think we can’t love avocado any more, it pops up in these Avocado Sweet Potato Brownies! Their versatility seems endless. Throw in a sweet potato and now you have moist AND rich combined into one delicious treat. Oh, and can we just talk about the health factor. Antioxidants in the cacao, healthy fat in the avocado and coconut milk, the fiber and other nutrients in the sweet potatoes…YES!

We can’t wait until you give these babies a try. Fair warning, you may be tempted to eat the whole pan so be sure to share with someone you love!

    Ingredients

    • 1/2 cup mashed avocado (about 1/2 an avocado)
    • 1/2 cup cooked sweet potato
    • 1/2 cup creamy nut butter (almond or cashew recommended)
    • 1/2 cup Lily's chocolate chips or other low sugar chocolate chips
    • 2 tbsp. Lakanto Monkfruit, Lakanto Monkfruit syrup, or Xyla brand xylitol
    • 1/4 cup full fat canned coconut milk
    • 3 tbsp cacao powder

    Bake Time: 20 minutes

    Preheat the oven to 325 degrees, and line a regular size loaf pan with parchment paper, or grease it with butter or coconut oil.

    Set the chocolate chips aside blending all other ingredients. After well-blended, add chocolate chips and transfer to loaf pan.

    Batter will be thick and sticky so level with a spoon to make it even. Bake for 20 minutes.  Cool, slice, eat, enjoy!
