Gluten-free Chicken Nuggets

When the boss is away, the girls and kids will play!! So, when Lisa goes out of town, Robbin and I usually think of something to get into! This time we decided to get my daughter, Summer, involved too and share her love of cooking and how easily it can be to get your kids involved with you in the kitchen.
The BEST thing about this recipe is that your kids will absolutely LOVE it! This is a recipe that people of all ages will enjoy and want to go back for seconds! It cooks up quickly and is a fantastic and healthy alternative to a kid friendly food.
We served ours up with a family favorite side dish of cinnamon baked sweet potato chips!

Ingredients
- 2 lbs. chicken tenders
- 1 egg
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 2 teaspoons garlic powder
- 1/2 -1 teaspoon salt (depending on how salty you like things)
- 1 teaspoon pepper
- 1/4 teaspoon paprika
- avocado oil
- salt & pepper
Directions
In a shallow bowl combine almond flour, coconut flour, garlic powder, salt, pepper & paprika.
Liberally sprinkle salt and pepper on both sides of the chicken tenders.
In a small bowl stir up 1 egg.
Dip the chicken tenders in the egg, then roll them around in the breading mixture.
Press the mixture all over the chicken and then shake off the excess.
Place a large skillet over medium high heat, then add 1 tablespoon of oil to the pan.
Once oil is hot, add a few tenders and cook for about 3 minutes on each side. Continue with the rest of the tenders and enjoy with your family!
